Loaded Hummus & Veggie Sandwich
A creamy, crunchy, dreamy combo of hummus, sharp cheese and crunchy vegetables

Ingredients

slices
whole grain bread
3
tablespoons
hummus
2
slices
tomato
sliced hothouse cucumber
shredded or thinly sliced carrots
halved baby carrots work fine
sharp cheese
like cheddar or Kerrygold Dubliner
Instructions
Smear most of the hummus on one side of bread and a little bit on the other half.
Layer with cheese, cucumber, tomatoes and carrots.
Top with the other slice of bread.
