- Watch Your Back Kale. Kelp is Gunning for The Veggie Du Jour Title – NPR // “Macroalgae” is coming! Try seaweed snacks (love them), throw kelp into your smoothie (for brave early-adopters) and look out for sea vegetable-inspired products at your market. Kelp provides minerals like iodine, potassium, magnesium, calcium and iron. Bottom Line: Kelp is cool
- The 5 Secret Reasons We Don’t Lose Weight: Why giving up fats and sweets isn’t actually the way to go – Psychology Today // Sleep, eat fat, make plans, don’t go into all-or-nothing mode, take it easy. Bottom Line: If your eating plan is super hard, you’re crazy hungry, and you’re looking for results yesterday, it’s not going to work in the long run.
- Would Consumers Eat Animals Fed on Insect Protein? – Food Navigator // An EU-funded project is asking whether people would eat animals fed on protein from insect larvae. Last year in a similar study, over 70% of respondents said yes. Bottom Line: Do you know what your food is eating now? Increasing global demand for meat requires more sustainable sources of protein to feed livestock.
- Nuts are a Nutritional Powerhouse – The New York Times // Large observational studies have noted that the more nuts people eat, the less likely they are to die at any age – especially from cancer, heart disease, and stroke. Bottom Line: Nuts are healthy. Fat is not bad, it’s satisfying. Enjoy your 1.5 ounce serving of nuts, peanut butter on toast, and chocolate hazelnut butter in oatmeal!

- Peanut Butter Veggie Pasta Salad – NourishRDs
- Shakshuka – Tori Avey // Shakshuka is a spicy tomato stew with eggs poached on top. I use a 28 ounce can of whole tomatoes and crush them with my hands and red pepper flakes instead of chili powder. Serve with warm pita and hummus topped with a drizzle of olive oil, a dusting of paprika, and chopped cucumber.

- Strawberry Gin Smash – The Kitchn // It’s strawberry season and I love gin drinks – perfect combo!
Snacks:
- Granola Bars – Alton Brown // Fantastic. I made these the day before A & I went to San Antonio for a wedding and we ate them throughout the whole trip. I used oat bran instead of wheat germ and roasted sunflower seeds instead of raw.
Desserts:
- Carrot Cookies with Orange Cream Cheese Frosting – Eat Cake for Dinner

The animal protein one? That just sparked the notion that I pay no attention to what foods the animal protein I consume eat…That’s insane! I may keep the motto of ignorance is bliss!
