What I’ve Been Up To:
I’ve been really happy with my healthy breakfasts and dinners this past week.
One big highlight was last night’s dinner from Ellie Krieger’s ‘Weeknight Wonders’ cookbook: Corn and Quinoa with Sausage and a Crisp & Cool Shredded Romaine Salad. Quinoa is a Peruvian superfood like kiwicha – see my recipe for popped kiwicha granola! We tossed cooked quinoa in a skillet with browned jalapeno chicken & turkey sausage, fresh tomatoes, diced onions and peppers, corn, parsley, and lime juice, and served it next to a perfectly simple, cooling shredded romaine salad.
I’ve also been digging into my popped kiwicha granola (also called amaranth), and love it on top of plain lactose-free yogurt with mandarin orange wedges for breakfast:
On the non-food front, I’m excited to read my new book, “the life-changing magic of tidying up: the Japanese art of decluttering and organizing” by Marie Kondo. I absolutely believe that a clean, healthy home has the power to affect our mental and physical health and I’m excited to see what I can adopt and share with you!

Great roundup, Caroline! I love these links – especially the fruit snacks one (sending to a few of my mom clients!), and the exercise study + exercise resolutions articles. Your dinner looks delicious (but I’d need about 5x that serving!).
