What’s your favorite way to eat an avocado? I love them plain – just a buttery slice all on its own. When it comes to recipes, Cooking Light’s avocado, cherry tomato, mango salad is a hit in my house. You just toss the fruit together with fresh lime juice, sea salt and sliced green onions.

Avocado-Mango Topper

Serves 6
Ingredients:

2 ripe Hass Avocados, peeled, pitted and diced
-
1 ripe mango, peeled and diced

1 cup seeded, diced tomato
-
1/4 cup chopped fresh cilantro
-
2 Tbsp. chopped red onion
-
1 Tbsp. minced jalapeño pepper
-
1 Tbsp. lime juice
-
1/2 tsp. salt
-
1/4 tsp. ground black pepper
Instructions:
- In a medium bowl, combine mango, tomato, cilantro, onion, jalapeño, lime juice, salt, and pepper.
- Add avocado and toss gently.
